Neotame, the chemical name is: N-[N-(3,3-dimethylbutyl)-L-α-aspartyl]-L-phenylalanine-1-methyl ester, it is a white crystalline powder , Containing about 4.5% crystal water, is a functional sweetener. It has pure sweetness, sweetness and harmony, very close to aspartame, without the bitterness and metallic taste often associated with other powerful sweeteners. The sweetness is 7000-13000 times sweeter than sucrose and 30-60 times sweeter than aspartame. The energy value is almost zero. It can remain stable under instantaneous high temperature conditions. In cake production, after baking at 450 0C, 85% of neotame is still present.
Application
1. Application in canned fruit
Reduce the overall proportion of syrup, thereby reducing the phenomenon of fruit floating, without adding more fruit. In GB2760, the only sweetener that can be used in canned products is allowed. Neotame exhibits good stability during the heat treatment of canned products. Replace 40%-50% sucrose, reduce product cost. The product shelf life is 12-24 months. Flavor: sweet orange, bayberry, loquat, lychee, pineapple, longan. Recommended sweetness multiple: 6500-7000.
